Starter (single 14 €)
- Cold crustacean cream, fennel mousse
- Soft-boiled egg, celery mousseline, tomato coulis
- Sea bream tartare, citrus fruit dressing sauce, spinach salad
- Melon and duck breast smoked in the castle
- Mussel salad and peppers marinated with coriander
- Cannelloni of smoked salmon, anis de Flavigny cream

Dish (single 25 €)
- Preserved salmon with rosemary, roasted asparagus and tomatoes
- Sea bass cooked “meunière”, young carrots with honey
- Pan fried cod, small stuffed vegetables and basil butter
- Grilled tenderloin, potatoes with herbs and preserved tomatoes
- Roasted chicken suprême, young vegetables with melisse herb
- Veal grenadin, fresh peas and Espelette pepper

- Selection of fresh and matured cheeses of our regions

Dessert (single 10 €)
- Creamy dessert with milk chocolate, vanilla ice-cream
